Vegetable Tortilla Roll Ups (Printable)

Soft tortillas rolled with a creamy cheese spread and crisp vegetables for a quick, colorful appetizer.

# What You'll Need:

→ Creamy Spread

01 - 1/2 cup cream cheese, softened
02 - 2 tablespoons sour cream
03 - 1 tablespoon mayonnaise
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - Salt and freshly ground black pepper, to taste

→ Vegetables

07 - 1/2 red bell pepper, finely diced
08 - 1/2 yellow bell pepper, finely diced
09 - 1 small carrot, peeled and grated
10 - 1/2 cucumber, deseeded and finely diced
11 - 2 green onions, finely chopped
12 - 2 tablespoons fresh parsley, chopped (optional)

→ Wraps

13 - 4 large flour tortillas (10-inch diameter)

# Directions:

01 - In a medium mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, and black pepper. Blend until the mixture is smooth and creamy.
02 - Fold the diced bell peppers, grated carrot, cucumber, green onions, and parsley (if using) into the creamy spread until evenly distributed.
03 - Lay each flour tortilla flat on a clean working surface.
04 - Spread one quarter of the vegetable mixture evenly over each tortilla, maintaining a 1/2 inch border along the edges.
05 - Roll each tortilla up firmly to enclose the filling.
06 - Using a sharp knife, cut each roll into 1-inch pieces. Arrange slices on a platter and serve immediately or cover and refrigerate for up to 4 hours prior to serving.

# Helpful Tips:

01 -
  • The creamy spread binds the vegetables together like they were always meant to be tucked into a soft tortilla.
  • It takes just minutes to make but always manages to look like you devoted extra effort.
02 -
  • If the tortillas are cold or dry, they will crack and split when you roll them.
  • Letting the rolls chill for 10-15 minutes in the fridge makes slicing so much tidier.
03 -
  • Always dry the diced vegetables thoroughly before mixing to keep your filling creamy, not watery.
  • A pinch of smoked paprika or a few drops of hot sauce can wake up the whole batch in seconds.
