Baked Oatmeal with Fruit (Printable)

Warm, wholesome oats baked with cinnamon, brown sugar, and fresh fruit. An easy make-ahead breakfast.

# What You'll Need:

→ Dry Ingredients

01 - 2 cups old-fashioned rolled oats
02 - 1/2 cup chopped walnuts or pecans
03 - 1/2 cup packed brown sugar
04 - 1 teaspoon baking powder
05 - 1 teaspoon ground cinnamon
06 - 1/4 teaspoon salt

→ Wet Ingredients

07 - 2 cups milk (dairy or non-dairy)
08 - 2 large eggs
09 - 1/4 cup melted butter or coconut oil
10 - 2 teaspoons vanilla extract

→ Fruit Add-ins

11 - 1 cup blueberries, sliced bananas, or diced apples

# Directions:

01 - Preheat oven to 350°F. Grease a 9x9-inch baking dish with butter or non-stick spray.
02 - In a large mixing bowl, combine the rolled oats, chopped nuts, brown sugar, baking powder, ground cinnamon, and salt. Stir until evenly distributed.
03 - In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth and well blended.
04 - Pour the wet mixture over the dry ingredients and stir gently until everything is thoroughly combined.
05 - Gently fold in your choice of blueberries, sliced bananas, or diced apples, distributing the fruit evenly throughout the batter.
06 - Pour the batter into the prepared 9x9-inch baking dish and spread it into an even layer.
07 - Bake for 35 to 40 minutes, until the top is golden brown and the center is set. A toothpick inserted in the middle should come out clean.
08 - Allow the baked oatmeal to cool for 5 to 10 minutes before slicing. Serve warm with a splash of milk, a dollop of yogurt, or a drizzle of maple syrup.

# Helpful Tips:

01 -
  • It tastes like a warm hug from the inside but secretly takes almost no effort to throw together.
  • You can prep it the night before and just pop it in the oven when you stumble downstairs half awake.
02 -
  • If you overbake it the oatmeal will dry out and become crumbly instead of creamy so check it at the 35 minute mark first.
  • Letting the baked oatmeal rest for those few minutes is not optional because it finishes setting and slices much cleaner.
03 -
  • Toast the nuts in a dry pan for three minutes before adding them because the flavor difference is genuinely surprising.
  • If you want to make it the night before, assemble everything in the dish, cover it tightly, and refrigerate it then just add five extra minutes to the bake time in the morning.
